چکیده

A series of hydroxypropylated starch (HPS) that can be dissolved in water at 60–65 °C was obtained via two-step method system from corn starch. The structure and property the HPS its gelatinization temperature were characterized by Fourier transform infrared spectrometer, nuclear magnetic resonance spectroscopy (1H NMR), X-ray diffraction (XRD), differential scanning calorimetry (DSC), electron microscopy (SEM), transmission microscope (TEM). It concluded hydroxypropyl mainly bonded on hydroxyl group C2 position glucose residue form C–O–C, substitution level C6 slightly higher than C3 position, as well crystallinity decreased 52.41% to 29.4% due introduction confirmed XRD. At same time, grooves surface granules observed SEM. above-mentioned two synergies promoted permeation molecules microstructure. Moreover, temperatures enthalpy synthetic lower those raw starch, further DSC. This caused with a molar greater 0.1 soluble 65 °C, dissolution state similar 95 (transmittance above 55%), exhibited high slurry stability. Interestingly, compared film showed excellent tensile strength elongation relative humidity 65%, which could attributed hydrophilic ether bond flexible alkyl chain study will provide new way for preparation performance size sizing yarn medium–low temperature.

Gelatinization temperature of rice explained by polymorphisms in starch synthase.

The cooking quality of rice is associated with the starch gelatinization temperature (GT). Rice genotypes with low GT have probably been selected for their cooking quality by humans during domestication. We now report polymorphisms in starch synthase IIa (SSIIa) that explain the variation in rice starch GT. Sequence analysis of the eight exons of SSIIa identified significant polymorphism in onl...

Pressure Gelatinization of Potato Starch

This article reviews the pressure gelatinization of starch with a special focus on potato starch which is a key food ingredient and an industrial raw material. First of all, the application of high hydrostatic pressure (HHP), as a novel processing parameter, to food processing is briefly overviewed with some historical backgrounds. It has been revealed in the last century that a starch-water mi...

Gelatinization and solubility of corn starch during heating in excess water: new insights.

Starch gelatinization is associated with the disruption of granular structure causing starch molecules to disperse in water. This study was designed to examine starch granules as they were heated in water, and their resulting morphological, structural, and solubility traits. The results indicate that starch gelatinization is a more complex process than the previously suggested order-to-disorder...

The Principles of Starch Gelatinization and Retrogradation

The polysaccharides, such as κ-carrageenan, ι-carrageenan, agarose (agar), gellan gum, amylose, curdlan, alginate, and deacetylated rhamsan gum, in water changed into an ice-like structure with hydrogen bonding between polymer and water molecules, and between water-water molecules even at a concentration range of 0.1% 1.0% (W/V) at room temperature, resulting in gelation. Such dramatic changes ...

Hydrolysis of granular starch at sub-gelatinization temperature using a mixture of amylolytic enzymes

Native granular starches (corn, cassava, mung bean, and sago) were hydrolyzed using amixture of alpha-amylase and glucoamylase at 35 ◦C for 24h. Hydrolyzed starches were analyzed for the degree of hydrolysis and for physicochemical and functional properties. Corn starch showed the highest degree of hydrolysis, as evidenced by the presence of distinct pores penetrating deep into the granules. Enz...
